Did I trick you with the title of my post?
I'm not down at all. I'm fantastic. I'm just eating - you guessed it! - a homemade Double Down.
How glutenous and delicious.
For those of you who are unfamiliar, the Double Down is a bun-less sandwich made by KFC. Each side is made of fried chicken and on the inside is cheese and bacon. In our case, we added tomato, just to make it a little bit healthier. You know, you need your vegetables.
Although I'll admit I could feel my arteries clogging while I ate the above monstrosity, it was pretty scrumptious. I couldn't finish mine, but the other half will be a nice snack for Ian today.
To make this grease-tastic sandwich:
Cut a chicken breast in half, then dip each half in spiced flour, egg and crushed cornflakes.
To cook it, heat corn oil in a pan until it's good and hot and then cook the chicken until it's brown and crispy on the outside.
Once it's cooked, put sliced Monterrey jack cheese, bacon, ranch dressing and tomato on top of the bottom half and then close up the sandwich with the remaining piece of chicken.
My advice for eating it is a) let it cool off a bit before digging in and b) have a drink of water before you start - once you get going, your hands will be a mess and you'll be in a precarious position when you attempt to pick up your glass with greasy fingers.
Happy heart attack. (I kid. Please don't have a heart attack because I encouraged you to eat this. At least wait until a week or two after eating it so I don't feel guilty. Thanks a bunch!)
